Penne Pasta with shrimp recipe


 

I'd like to share my pasta recipe.  My youngest daughter just loves her pasta.  Last night dinner I made penne pasta with shrimp and homemade sauce using fresh tomatoes.  


Penne pasta with shrimp recipe

I box penne pasta (I just used half of the box)

1 half onions diced small 

4 cloves garlic, minced

3 TBS. olive oil 

2 TBS capers

5 button mushrooms sliced thin

3 tomatoes cut into cubes

1 pound shrimp

1 cup parmesan cheese

1 cup white wine

3 TBS butter 

6 basil leaves (chiffonade) 

1 half lemon

salt and pepper to taste


Bring a pot of water to a boil, once the water is boiling add pasta.  Stir.  To cook the perfect pasta, you'd have to keep checking and stirring so that the pasta doesn't stick to the pot.  Make sure you don't over cook your pasta.  I'd cook my on Medium low heat for 10 minutes, having to stir every 3 minutes.  I'd turn off the stove, and just let it sit for another 3-5 minutes.  This is so you don't over cook your pasta, while its still cooking with the heat off.  Keep checking on your pasta.  Once done, save about 1/4 of pasta water.  Drain water, and cool pasta with cold running water.  Put on the side. 

Heat pan, add olive oil.  Add onions and a pinch of of garlic.  Sauté till onions are soft.  Add in capers, stir, add in tomatoes.  Sauté till tomatoes are soft and mushy.  Add in white wine.  Cook till wine reduces, then pasta water.  If your sauce looks thick, or you think it needs more liquid, add more water.  Don't add to much or you'll be having pasta soup.  Once sauce looks thick, turn heat off, add butter, stir, add a pinch of salt and pepper to taste.  Put on side.

Heat another pan, add olive oil and pinch of garlic.  Add mushrooms, cook for about 2 minutes, till mushroom is soft.  Put mushroom on the side.  

Using the same pan, just with pan down with paper towel, add olive oil and garlic. Stir, add shrimp.  Season shrimp with a pinch of salt and pepper. Make sure a tiny pinch.  So its not so salty.  Once shrimp is cooked, add it on the side.  Your ready to put everything together.

Now you can reheat your sauce, once heated add mushrooms, and shrimp, stir, add half of the basil, stir, add pasta, stir, season with another pinch of salt. Squeeze lemon on to pasta.  Stir until everything combined.  Now, add shredded parmesan cheese. Save some cheese to top off your pasta.  Add the rest of basil to pasta. Now, ready to eat!!!

This pasta would have been so much better if I had cilantro.  You can add some cilantro for more flavors to POP!
